Candy, I mean clean eating for dinner

Meal prep and planning for healthy eating is a big deal in our house.  One of our favorite meals and an almost weekly staple is this. (follow the link and connect it to your Pinterest board 🙂

Sweet potato Hash with Sausage and Eggs

Ingredients:

  • 1 lb turkey sausage
  • 1 Medium onion chopped (optional)
  • 2 medium sweet potatoes
  • cooking oil (avocado, olive oil…)
  • salt and pepper to taste
  • rosemary (I’m not a fan of rosemary so I leave this out)

Instructions: (cast iron skillet)

  1. Preheat oven 425 degrees
  2. Brown sausage. transfer to a plate
  3. reduce heat to medium/high, add 1tbsp oil to cast iron skillet and saute onions until translucent. Transfer to plate with sausage
  4. Heat 1 tbsp oil over medium high heat, add chopped sweet potatoes and cook (cover with lid), stirring occasionally, until tender (about 10 minutes).  Sprinkle some rosemary over sweet potatoes (optional)
  5. Add sausage and onions to the cast iron skillet and stir everything
  6. Crack four eggs over sweet potato hash.  Place cast iron skillet in the over and cook for about 10-15 minutes until eggs are set.
