Salads and grain bowls have been my go-to for lunches lately. I am stretching myself with vegetables and flavors I didn’t think I’d like them and yet I am pleasantly surprised by their rich deep flavor and filling results.
This week it is a Protein Grain bowl is beyond surprisingly delicious:
Ingredients for one serving:
- 1/2 c Quinoa
- 1 Small cucumber
- 1 tbsp Red onion
- 2-3 tbsp Feta cheese
- 2-4 Cherry tomatoes
- 1/4 c Cottage cheese
- 1/4 c Chickpeas
- 1/4 Avocado
Dressing (make ahead for the week – 5-8 servings)
- 3 tbsp Fresh lemon juice
- 1/4 tsp garlic powder
- 5 tbsp tahini
- 2-3 tbsp maple syrup
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 3/4 tsp dried oregano
- Salt and pepper to taste.
Put it Together
I make a cup of quinoa and store it for easy use daily. Each day I assemble the bowl so that the vegetables stay fresh.
Put all ingredients except for cottage cheese in a bowl.
add 1-2 tbsp dressing and mix together.
Slid salad off to the side and add cottage cheese to the bowl – mix in or eat separate
