Chili lime chicken salad

Ingredients:

  • Organic chicken breasts
  • 1/2 tsp Chipotle chili powder
  • 1/2 Tbs garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp lime zest
  • Salt and pepper to taste
  • 1 squeezed lime
  • Avocado
  • Tomato
  • Chopped garlic cloves
  • Lime juice
  • Kale
  • Olive oil
  • Balsamic vinegar
  • 2 tbs Tahini
  • 1 tsp Apple cider vinegar

Directions

Chicken

  • Preheat grill
  • Mix together dry spices and lime zest
  • Coat chicken in lime juice
  • Coat chicken in spices
  • Grill till done (5-8 min each side)

Salad

  • Massage kale, salt, 1/2 tsp olive oil and lemon juice
    Mix 2tbs olive oil, balsamic vinegar tahini and apple cider vinegar (dressing for one)

Guacamole

  • 2 avocados
  • 1 romana tomato
  • 2 tbs chopped garlic
  • Salt and pepper to taste
  • Lime juice to taste

Mix it all together everything into a yummy salad and enjoy!
