- 100g Sourdough Bread (or whole grain bread of choice, English muffins also good)
- 1 Can albacore tuna
- 1-2 tbsp Hummus (garlic is my fav)
- Handful of spinach
- 3/4 cup chopped red cabbage
- Shredded cheese
1. Preheat the oven/toaster oven 350 (also can be made in microwave but then fully toast the bread)
2. Pre-toast the bread just slightly
3. Top with hummus, tuna, spinach, and cabbage – cover with cheese and bake 10 minutes
It is amazing – you wouldn’t think so – but dang!
