
What I’m Eating This Week
I am trying a new thing when sharing my menu. I get a lot of questions about recipes so I thought I’d include a few recipes along with my weekly meal plan.
Opening the Day:
I start every morning with protein coffee as my pre-workout. I drink my coffee as I enjoy journalling, bible study, and spiritual growth.
In my coffee, I have: (129 calories, 24g protein, 4 g carbs, 2g Fat)

- 8-10 oz of coffee
- 1 Scoop of collagen peptides
- splash of Fairlife 2% milk
If I am going to do an intense workout or a workout longer than 45 minutes, I have a power ball in addition to my coffee.
Breakfast (immediately after exercise)
My breakfasts stay fairly consistent. I’ve been on an oatmeal kick because it is a high-fiber and high-protein way to start my day.
- 1/2 Cup of Rolled Oats
- 1/2 scoop Legion Cinnamon Cereal protein powder (sometimes chocolate peanut butter)
- 1-2 tsp chia seeds
- Mix and add frozen berries (Raspberries and blueberries are my fav) 1/2 of a banana would be great hear too!
- Cover with water and cook on low heat on the stovetop stirring frequently. Cook for 3-8 minutes
- Mix 2tbs PBFit with 1tbs water and a splash of sugar free maple syrup
- Drizzle the PBFit mixture on top of the oatmeal, top with additional fruit, 1/2 tbs sugar-free syrup, and a tsp of molasses
Lunch
This week I’m going with a buffalo chicken wrap or peanut butter egg and hot sauce sandwich. I use a low-carb/high-fiber wrap and sneak in more veggies on the side or into the wrap itself.
For the eggs, peanut butter, and hot sauce meal… my husband things I’m gross and maybe you do too, but I dare you to try this concoction:
- 1 large Slice of Sourdough Bread (toasted)
- 1 Applegate turkey maple sausage
- 1 Egg
- 1 Egg white
- 1 Tbs organic peanut butter
- as much hot sauce as you want (I used franks)
- top the toast with peanut butter, sausage, eggs, and then hot sauce.
Dinners This week
- Chicken Fajita Avocado Ranch Wrap
- Big Mac Salad
- Carne Asada
- Creamy Garlic Chicken w/ Mash Potatoes and Broccoli
- Italian Steak Sandwich
- Baked Fish and Baked French Fries with a Side of Asparagus
- Homemade Mediterranean Pizza
