Blueberry Broccoli Spinach salad

Another successful salad for the week! Packed with fiber and deliciousness

Ingredients:

  • Baby spinach and arugula
  • Blueberries
  • Blackberries
  • Broccoli
  • Lemon poppy seed dressing
  • Feta
  • Dried cranberries
  • Avocado
  • Sunflower seeds
  • Pepper to taste
  • Avocado oil
  • Salt

Directions:

  • Preheat over to 350 cut up broccoli coat lightly in oil and roast in oven for 20 minutes (flipping half way through)
  • Combine spinach and arugula mix, feta, blueberries, blackberries, dried cranberries, roasted broccoli and sunflower seeds
  • Put small amounts at a time of the lemon poppyseed dressing on top and toss (find your perfect fit of dressing)
  • Top with black pepper and avocado and enjoy!
