Another successful salad for the week! Packed with fiber and deliciousness
Ingredients:
- Baby spinach and arugula
- Blueberries
- Blackberries
- Broccoli
- Lemon poppy seed dressing
- Feta
- Dried cranberries
- Avocado
- Sunflower seeds
- Pepper to taste
- Avocado oil
- Salt
Directions:
- Preheat over to 350 cut up broccoli coat lightly in oil and roast in oven for 20 minutes (flipping half way through)
- Combine spinach and arugula mix, feta, blueberries, blackberries, dried cranberries, roasted broccoli and sunflower seeds
- Put small amounts at a time of the lemon poppyseed dressing on top and toss (find your perfect fit of dressing)
- Top with black pepper and avocado and enjoy!
